Chimacum Valley Brewing is an extension of the Grainery, where the organic barley we grow in the valley is floor malted by hand. This is beer brewed at village scale, aiming for an unfiltered, untampered beer offering the fullness of our fields and the flavors of this place.

SAISON— FARMHOUSE STYLE ALE
A true farmstead-style saison brewed and floor malted in our barn with our organic, Chimacum grown Talisman barley and heritage rye. A Mixed Fermentation. Barrel Aged in neutral oak barrels for six months and dry hopped for a complex, tart and floral effervescence. Dry oak and mineral spice with a floral complexity. 7% abv.
GRAIN HOPPER IPA— WEST COAST STYLE with Heritage Rye
Chimacum-style IPA, unfiltered. Brewed with our organic, Chimacum-grown, floor-malted Talisman barley. Mashed with malted rye for mineral spice and dry hopped for citrus and pine. Light straw color, medium body with balanced malt character. A “Grain hopper” is the tank on the combine that holds the harvest, like this beer. 6.5% abv.
GRASS IS GREENERPILSNER — GERMAN STYLE
An unfiltered, German inspired Pilsner. Brewed with our Chimacum, organically grown and floor malted Talisman barley. Light floral spice of hopes balanced by the warmth of malted barley.The German malt shines through making for a flavor forward brew with a light hop balance. A clean effervescent sipper as you watch the grass grow. 5% abv.
WINTER STORM OATMEAL STOUT
Dark roasted barley and smooth chocolate character evoke a broody winter afternoon in the valley. Brewed with a bucketful of organic Cascade hops, and our Chimacum grown organic Talisman barley, with a bit of roasted barley malt, chocolate malt and crystal malt.A winter ale with full complex mouthfeel and a hint of sweetness to smooth the stormy edges. 8% abv.
