Stone Milling
We mill our organic flour on a traditional stone mill — a beauty of a contraption crafted with real granite in Vermont by the good folks at New American Stone Mills. Milling on a stone mill allows us to grind all parts of the seed together into an aromatic, earthy cream-colored flour that preserves maximum nutrition from the grains. Because the stone mill is slow-turning, cooler and generally more gentle on the grain, the resulting flour is loaded with protein, minerals, fiber, vitamins, antioxidants and healthy oils.
Our flours are fresh-milled to order on the stone mill, and with it we produce a variety of offerings including bread flour, pastry flour, rye flour, spelt flour and many more depending on the year's harvest. We also produce our own line of pastas and breads.
